For the Meringue
  1. 100g Egg Whites
  2. 200g Sugar
  3. 10g Freeze Dried Strawberry Powder
For the Vanilla Cream
  1. 200ml Double Cream
  2. 500ml Milk
  3. 75g Caster Sugar
  4. 2 Eggs
  5. 2 leaves of Gelatin
  6. 20g Strawberry Granola, crushed.
For the Strawberry Sorbet
  1. 250g Strawberry Purée
  2. 250g Fresh strawberries
  3. 60g Sugar
  4. 30g Glucose
For the Strawberry Salad
  1. Strawberries
  2. Olive Oil
  3. Fresh Vanilla
  4. Basil
For the Meringue
  1. 1. Whisk the egg whites, adding the sugar gradually, and smooth the meringue onto a sheet of baking paper.
  2. 2. Dust lightly with freeze dried strawberry powder and cook at 100°C for one hour.
  3. For the Vanilla Cream
  4. 1. Boil the milk and cream together.
  5. 2. Mix the caster sugar and eggs, and add half of the cream mixture to the bowl. Whisk together.
  6. 3. Add this mixture into the remaining heated cream and milk, and add the gelatin leaf. Leave to set and cool.
  7. 4. Once set, cut into slices and coat in the strawberry granola.
  8. For the Strawberry Sorbet
  9. 1. Place the strawberry purée and fresh strawberries into a blender with the glucose and sugar.
  10. 2. Blend together and freeze.
For the Strawberry Salad
  1. 1. Mix the olive oil and vanilla, then coat the strawberries.
  2. 2. Serve with fresh basil leaves.
  3. Serve the meringue, strawberry salad, vanilla cream and sorbet together.
