Ingredients
  1. Butter, for greasing
  2. 500g homemade shortcrust pastry
  3. Flour, for dusting
  4. 6 egg yolks
  5. 75g caster sugar
  6. 250ml whipping cream
  7. 100ml milk
  8. 150g cherries, stoned
Instructions
  1. Grease a fluted flan tin. Lightly flour the work surface and the rolling pin, and roll out the pastry. Line the prepared tart tin with the pastry, trimming off any excess, then chill for 15 minutes. Preheat the oven to 200°C (180°C fan oven) gas mark 6.
  2. Blind bake the flan case for 15 minutes. Remove the parchment and beans, then bake for a further 5 minutes or until the pastry starts to turn golden around the edges. Reduce the oven temperature to 170°C (150°C fan oven) gas mark 3.
  3. In a small bowl whisk the egg yolks, sugar, cream and milk together until fully combined. Pour into the flan case and arrange the cherries over the top. Bake for 25–30 minutes or until the custard is just set and a little wobbly in the centre.
  4. Allow to cool in the tin on a wire rack. Serve cold.
