Ingredients
  1. 1 large onion, peeled and
  2. roughly chopped
  3. 2 cloves garlic, peeled
  4. 2 tbsp rapeseed oil
  5. 2 tbsp balti paste
  6. 1 tbsp tomato purée
  7. 2 tbsp crunchy peanut butter
  8. 400g can chopped tomatoes
  9. 400g can coconut milk
  10. 2 tbsp double cream
  11. Juice of 2 limes
  12. A handful of fresh coriander
  13. 200ml turkey stock
  14. 650g cooked turkey, cut into chunks
Instructions
  1. First, put the onion and garlic in a processor and chop them until they are almost mushy. In a wok or deep sauté pan, heat the oil and fry the onion mixture until it starts to brown, then stir in the balti paste and tomato purée; fry the ingredients for one minute.
  2. Next, stir in the peanut butter and fry the mixture on a low heat until the oil begins to separate and the sauce has darkened. Add the tomatoes, coconut milk, double cream, lime juice, half the fresh coriander and stock and gently simmer for about 20 minutes.
  3. Finally, add the cooked turkey and simmer for five minutes, or until the meat is hot and heated through. Serve with rice and thick yoghurt, and sprinkle the remaining coriander on top of the curry for an extra burst of flavour.
