- 1kg Chantenay carrots
- 50g butter
- Chopped parsley
- ½ lemon
- Salt and pepper
- Boil the carrots in salted water until they are just crunchy.
- Drain the carrots and add the chopped parsley, butter and lemon juice from half a lemon. Coat the carrots well in the mixture.
- Season with salt and pepper and serve while still hot.
