Ingredients
  1. 200g smoked lardons
  2. 12 small shallots
  3. 50g butter
  4. 30g flour
  5. 750ml beef stock
  6. 1kg small potatoes, peeled and quartered
  7. 2 sprigs of thyme
  8. Chopped parsley
  9. Sea salt and black pepper
Instructions
  1. Fry the lardons and shallots in the butter.
  2. Remove from the pan and stir the flour into the butter. Cook the mixture until slightly brown and add the stock.
  3. Season and add the potatoes and thyme.
  4. Cover and simmer gently until the potatoes are soft.
  5. Serve sprinkled with chopped parsley.
